Seeds from berries contain between 11% and 23% oil, which can be extracted by the cold pressing method. Cold pressed berry seed oils (CPBSO) are extracted between 40°C and 60°C depending on the composition of the different seeds. CPBSO have unique characters due to their high content of polyunsaturated fatty acids (PUFAs) and low n-6/n-3 ratio (3/1–2/1) of fatty acids. The oils have high levels of tocopherols and tocotrienols, which explain the stability of the oil. Berries are a rich source of a wide variety of bioactive compounds such as flavonoids, phenolics, anthocyanins, phenolic acids, stilbenes, tannins, essential oils, carotenoids, vitamins, and minerals. Bioactive compounds within CPBSO have potent antioxidant, anticancer, antimutagenic, antimicrobial, antiinflammatory, and antineurodegenerative properties. This chapter summarizes the cold pressed method of extraction and processing of CPBSO, their composition of bioactive compounds, including their health effects and other potential applications.
