摘要
Incorporation of a suitable carrier material or additive with the food ingredients in the spray drying operation has become a common practice to optimize the drying performance and the quality of final products. To achieve those goals, the detailed information and understanding of the carrier material characteristics and the influence are very important. Recently, many studies have developed a new carrier material and conducted a different carrier material formulations to explore its potential and improve the spray-dried powders. Therefore, the knowledge of the present and alternative carrier materials that could be applied in the industry were reviewed.
