摘要
Bamboo shoot is a health food rich in dietary fiber (DF). However, its high insoluble dietary fiber and fibrous texture limits its application in industrial processed foods. In order to achieve industrial processing of bamboo shoots, the cellulase was used to improve the physical characteristics of bamboo shoot DF in this study. After enzymatic hydrolysis, the content of soluble dietary fiber (SDF) of bamboo shoot increased by 99.28% (from 5.53% to 11.02%) significantly (p<0.01). At the same time, the effect of enzymatic modified bamboo shoot dietary fiber (EMBSDF) on streptozotocin (STZ)-induced type 2 diabetes rats was explored. Results demonstrated that the glucose tolerance and insulin sensitivity of diabetes rats treated with high dose of EMBSDF (312.8 mg/kg) improved significantly (p<0.01). Moreover, the levels of glucagon-like peptide-1, adiponectin and interleukin-4 increased by 57.79%, 159.13% and 6.17% (p<0.01), respectively, and the levels of tumor necrosis factor-ɑ, c-reactive protein and leptin decreased by 62.89%, 31.53% and 7.84% (p<0.01), respectively. Furthermore, apparent improvements of kidney and pancreas histology were found in high- and mid-dose EMBSDF treated diabetic rats. These results indicated that the modified dietary fiber showed a significant improvement on diabetes.
