Abstract: Other microbial polysaccharides (pullulan, scleroglucan, elsinan, levan, alternan, dextran) deals with the miscellaneous polysaccharides possessing important and potential applications in the food industry. It provides a comprehensive but concise description of all these microbial polysaccharides. The chapter begins with an introductory section which gives a brief overview of the polysaccharides. This section is followed by respective sections for each of the individual polysaccharides. Each of these sections discuss the origin and manufacture, chemical structure, functional properties, technical data, uses and applications and regulatory status of each polysaccharide.
