Using the gravimetric method to measure the solubility of p-coumaric acid in nine mono solvents, including methanol, ethanol, 1-propanol, 2-propanol, n-butanol, isobutanol, acetone, ethyl acetate, and methyl acetate, and also in the water + ethanol mixtures from 293.15 to 333.15 K at atmospheric pressure (p = 0.1 MPa). The modified Apelblat equation, van't Hoff equation, λh equation, nonrandom two-liquid (NRTL) equation, universal quasichemical (UNIQUAC) equation, and Wilson equation were used to correlate the solubility of p-coumaric acid in mono solvents. The modified Apelblat and Jouyban–Acree model were used to correlate the solute solubility of p-coumaric acid in binary mixtures of water + ethanol. The solubility calculated based on the equations mentioned above was in good agreement with the experimental values. The modified Apelblat equation was the most accurate to correlate the experimental data.
