Enzymes are biocatalysts that have been used extensively for industrial applications. The scope of diverse use of enzymes makes them the choicest biochemicals for exploitation. The role of enzymes in different extraction processes is well-established and understood. Enzymes have been used for increasing the recovery of oils from various sources. However, the need to enhance the efficiency of enzyme-assisted extraction processes continues to be an important research area. This chapter presents an overview of different enzyme-assisted edible oil extraction processes.
