摘要
Based on biological analogy the electronic tongue is an analytical instrument in which electrodes and/or optical sensors etc. play the role of taste receptors, and the brain is substituted by a computer equipped with an appropriate machine learning algorithm. Following chapter describes the biological inspiration behind this kind of systems together with their working principle and methods of machine learning used for signal analysis. Second part is focused on applications in the wine and beer markets which are described from both consumer and manufacturers perspective.
