摘要
This article presents the chemical composition of quinoa grains and leaves. It provides the results of proximate analyses and data on quinoa starch, proteins and amino acids, fats, polyamines, vitamins, minerals, and antinutritional factors including saponins. Also included is information on the history and importance of quinoa cultivars and varieties and a description of the analytical methods used for this study
