Food-friendly packaging are supposed to keep the food quality and freshness in terms of moisture and odour and protect foods against microbial putrefying contaminants and oxidant agents. This study has aimed to fabricate biodegradable electrospun chitosan/polyethylene oxide membranes loaded with gallic acid and nisin for antioxidant/antibacterial properties. gallic acid/nisin loaded core-shell chitosan/polyethylene oxide nanofiberous membranes were fabricated through electrospinning and characterized by transmission and scanning electron microscopy, fourier-transform infrared spectroscopy, and differential scanning calorimetry as well as antioxidant and antibacterial activities. gallic acid (10%)/nisin (0.05% and 0.07%) loaded membranes showed maximal tensile strength as well as antioxidant and antimicrobial effects for 20 and 60 days, respectively. Stretchable electrospun gallic acid/nisin loaded chitosan/polyethylene oxide membranes possess antioxidant and antibacterial properties and can be suggested as potential food packaging membranes.
