Preservation Mechanism of Chitosan and Its Application in Food Preservative Packaging

The preservation mechanism of chitosan and its influencing factors were introduced. The application of chitosan in fruit,vegetable,and other food was summarized. The reasons of chitosan's not being applied yet were analyzed. The development of chitosan preservative packaging technology was prospected.
