摘要
Using high performance liquid chromatography,On Shaoxing rice wine in 7 kinds of organic acid(oxalic acid,tartaric acid,malic acid,lactic acid,acetic acid,L-,citric acid,succinic acid) content were determined,And with the national standard method of determination results.The results showed: the different varieties of rice wine,kinds and contents of organic acids have distinction,Shaoxing wine lactic acid content was the highest.Compared with the national standard methods,chromatography determination result is high,this complex is related to the composition of yellow rice wine.
