摘要
Fresh aquatic products are a popular and important food category. They are rich in nutrients, which can help improve the dietary structure and alleviate the problem of micronutrient deficiency. Fresh aquatic products are easily spoiled in the supply chain due to their quality characteristics, which not only leads to quality deterioration, but also may cause food safety problems. Throughout the supply chain of fresh aquatic products, it is crucial to identify and prevent quality decline. In order to adapt to the changing consumer demand, some new aquatic product quality detection technology and quality control methods are emerging. This article reviews several major categories of intelligent detection and quality control technologies, including spectral technology, sensory technology, non-thermal processing technology, and natural antiseptic. In this paper, the intelligent detection technologies and control methods of quality deterioration in the supply chain of fresh aquatic products are detailed reviewed from the aspects of principle, research progress and application along with an assessment of their development potential and application advantages and disadvantages.
