Enzyme-assisted extraction process involves the use of enzymes to obtain oils and proteins from the seeds, particularly the oilseeds. In this process, the extraction solvent would be water, which has several good benefits over the conventional extraction method. In the conventional extraction method, extraction of edible oils is performed either through organic solvent only or by applying screw pressing before the solvent extraction process. Using water as the extraction medium with enzymes to speed up the recovery of oil from oilseeds is known as “enzyme-assisted extraction.” This chapter deals with a technology that holds promise for simultaneously extracting protein and oil from oilseeds such as soybean, rapeseed, corn, canola, and peanut.
