Alcohol dehydrogenase (alcohol: NAD + oxidoreductase; EC 1.1.1.1: ADH) isozyme 2 (ADH2), the isozyme induced in tomato (Lycopersicon esculentum) roots, stems, and culture cells under anaerobic conditions, is present in ripe fruits. During the ripening of tomato fruits, from mature green to red ripe, the mRNA for ADH2 increases about 12-fold, while ADH2 activity increases three- to four-fold. The size of this mRNA is about 1.5 kb. ADH2 mRNA and activity are rapidly (within 1 h) induced by anaerobic treatment of fruits. Pyruvate decarboxylase, the enzyme preceding ADH in the anaerobic glycolytic pathway, is similarly induced during anaerobiosis, but not during ripening. This indicates that ADH2 induction during ripening is controlled separately from induction by anaerobiosis
