摘要
Exocellular polysaccharides(EPS) are natural biological polymers, which are composed of sugar residues and secreted by lactic acid bacteria(LAB) into surrounding environment. It has unique physical properties and physiological functions, moreover, can be widely used in foods as thickener and stabilizer, improving the rheology and texture of fermented dairy products. However, low yields of in situ production of exopolysaccharide are potential barrier for the industrial applications, thus providing insights into the factors which influence the production of exopolysaccharide produced by lactic acid bacteria has far-reaching significance. This overview provides information about effects of lactic acid bacteria strains, medium composition, fermentation conditions, extraction conditions on yield. Importantly, we also put forward the effective ways to promote the research and application of exopolysaccharide.
