The impact of our global food system on climate is material. In its current form, our food system is not sustainable, as it contributes nearly one-third of global greenhouse gas emissions. The majority of agricultural emissions stem from the livestock sector, where cattle-based products stand out as one of the main contributors to emissions, land use, water use, and biodiversity loss. While continued improvements are underway in the livestock industry, raising animals for food is incredibly resource-intensive and carries major climate consequences. Most experts agree that a global shift away from heavy reliance on animal-based production systems is needed. Precision fermentation technology offers a way to remove animals from some of the most beloved dairy foods on the planet, including cheese, while delivering on taste, functionality, and nutrition offered by traditional dairy, ushering in a new era of sustainable dairy.
