摘要
The tolerance stability of black sweet corn was investigated in this paper. The results showed its tolerance to light is weak, while it can be proved that the tolerance to heat is strong. The stability of melanin in acid, alkali, deoxidant and Na+, K+ solution is relatively good, while the stability in oxidant, Al3+, Fe3+ solution is bad.
