Sucralose, a high-potency sweetener, is made from sucrose by a process of chemical modification that results in the enhancement of the sweetness intensity, retention of a pleasant sugar-like taste and creation of a very stable molecule. Details of key properties, including sensory, physico-chemical and physiological properties, along with product application information are presented to illustrate the stability and versatility of sucralose, which can be used in a wide variety of foods and beverages. An overview of the safety and environmental assessments of sucralose is provided, along with a summary of the regulatory situation. Sucralose is approved for use in food products in most countries around the world and has become very popular with both consumers and the food and beverage industry.
