Amaranth, quinoa and buckwheat arc dicotyledonous crops which, although not closely related to each other or to grasses, are often termed pseudocereals because they produce small grain-like seeds. Amaranth (Amaranthns spp., Amaranthacea), and quinoa (Chenopodium quinoa, Chenopodiacea) are both natives of Meso America and South America, respectively, and were important crops in pre-Colombian times. In contrast, buckwheat (Fagopyrum esculentum, Polygonaceae) is thought to have originated in China (Campbell, 1995).KeywordsAmino Acid CompositionDisulphide BondSedimentation CoefficientGlobulin FractionChenopodium QuinoaThese keywords were added by machine and not by the authors.
