With the immunological activity and DPPH· scavenging capacity of the peptides obtained as targets,the hydrolysis effect of neutral protease and papain on proteins from Cervus-elaphus linnaeas antler blood and the relationship between DPPH· scavenging capacity and immunological activity of the peptides obtained were studied.The optimal hydrolysis conditions of the proteins catalyzed by neutral protease and papain were at 50 ℃ under pH 7.1 for 2 h,and those catalyzed by and papain were at 45 ℃ under pH 6.8 for 1.5 h when the [E/S] was 9000 U/g.Compared with the single protease,the immunological activity of peptides obtained increased 20.8% under the same content of protein.The results implied some relation between DPPH· scavenging capacity and immunological activity of the peptides (r=0.957,P0.01).
